I can eat these all day! Soooo delicious yet so simple to make.
I am always looking to make yummy side dishes. I don’t know about you, but, to me, a meal is not complete without vegetables.
Here are the ingredients:
2 cups fresh baby spinach
½ of a small yellow onion, cubed
2 cloves garlic, minced
1 teaspoon balsamic vinegar
A drizzle of honey (about ½ teaspoon)
¼ teaspoon crushed chili pepper flakes
A pinch of sea salt and freshly-ground black peppers
Over medium heat, pour some olive oil in a sauté pan. Once the oil is hot, add the garlic and sauté for about a minute. The garlic should be lightly browned. Next, add the onions and sauté for about 2 minutes.
Next, add the spinach. Sauté until the spinach look a bit withered. Add the balsamic vinegar and chili flakes. Season with sea salt and black pepper, then drizzle with honey. Mix well to ensure the flavors are balanced. Serve warm. I had mine with some brown rice and my pork tenderloin (recipe for which could be accessed through https://ellabellaskitchenadventures.wordpress.com/2014/01/01/pan-roasted-pork-tenderloin/).
