Ella Bella’s Chicken Teriyaki

Prep time:  About 7 minutes

Cooking time:  Minimum of 6 hours in the slowcooker

Calories per serving:  Only 235

The slowcooker, a.k.a. crockpot is one of my favorite kitchen gadgets this time of the year. I love making soups, or any other dish that I can easily put together and just wake up to something delicious that I can take with me for lunch.

Not only is this method economical, it’s also so easy! So for this teriyaki recipe, all you need to do is gather these ingredients, prep up your slowcooker, then choose your settings and wait until your yummy concoction is all done and ready to be consumed!

Here are the few ingredients you will need:

Chicken Thighs, about 4 pieces

3 cloves garlic, minced

Pineapple Tidbits In Juice, 1 container

8 tbsps Light Soy Sauce

1 tbsp  Cornstarch

Chipotle Peppers In Adobo Sauce , 1/2 of the can’s contents

In a small bowl, mix together the soy sauce and cornstarch until the cornstarch is dissolved. Pour mixture onto the crockpot. Next put in the pineapple tidbits, including the syrup.

Add the chipotle peppers, make some sort of a bed out of them for the chicken thighs. Lastly add in the chicken thighs and cover with the crockpot lid. I cooked them in low for 8 hours.

Alternatively, if you do not own a crockpot, you may cook your chicken thighs in a pot for about an hour on low heat on the stove top. You just have to watch your heat to ensure the temperature is low enough and your sauce or chicken isn’t burning. You also need to make sure the chicken meat is cooked through.

Hope you enjoy my version of a classic Asian recipe!
