Q4 is kicking your chef’s butt! 🙂 Despite the chaos I am experiencing though, I just feel compelled to make something healthy yet luscious, for Halloween.
Here is my version of Halloween cupcakes – nothing wonky – just some delicious flavors in a few bites.
For the ingredients, you will need:
2 cups, Wheaties Cereal, ground
1 cup Quick Oats
1 cup King Arthur Unbleached Cake Flour
2 tsps Pure Baking Soda
1 tsp ground cinnamon
½ tsp nutmeg
1 tsp sea salt
2 large eggs, slightly beaten
1 container (6 oz) Plain Greek Yogurt
1 ½ cups fresh carrots, grated
1 cup One Pie Canned Pumpkin
1/4 cup honey
¾ cup brown sugar
For the frosting:
1 package 1/3 Less Fat Cream Cheese, softened (preferably in room temperature)
½ of a tub of Lite Whipped Topping
½ cup powdered sugar
¼ cup fresh carrots, finely chopped
Preheat the oven to 325 deg F (167 deg C). Mist the muffin cups with baking spray. Set aside the muffin pans until they are ready to use. You will need to fill about 20 tins.
In a medium mixing bowl, cream the yogurt and sugar. Add the honey, eggs, carrots and pumpkin. Mix well.
In a large mixing bowl, mix together all the dry ingredients. Incorporate yogurt mixture into the dry mixture gradually. Use a hand mixer if you want a smoother batter.
Fill each muffin tin/cup with batter about 2/3 of the way. Bake for about 25 to 27 minutes. I baked mine for 27, after testing one of the muffins with a bread knife to see if they’re done.
Cool muffins completely. While muffins are cooling down, prepare the frosting. All you need to do is to combine the softened cream cheese, whipped topping, powdered sugar and carrot bits. I thought adding the carrot bits to the frosting would be a nice touch. Don’t they look pretty?
Feel free to be creative with how you frost your cupcakes. I only have so much time to do it so these are not necessarily the prettiest, but I sure was happy with the outcome. The cupcakes are now gone as I post this 😉 Happy Halloween, folks!
