Tacodilla a la Ella Bella

OH MY DELICIOUSNESS!  Now I know what to make with my leftover taco meats! Presenting Taco-Quesadilla!

This is so easy to make too! So what are you waiting for? Put on your apron, raid the fridge, grab these ingredients and get your lunch or dinner ready in a jiffy!

One 8-inch Flour Tortilla, Fajita or Burrito Size

¼ cup Beef – Taco Meat

½ of a Roma Tomato, diced

About 2 tbsps Diced Yellow Onions

¼ cup 2 Cheese Mexican Taco (Cheddar and Monterey Jack Cheese Blended With Spices)

Cooking spray, about 3 sprays (about a teaspoon of vegetable oil)

Spray a medium skillet with vegetable or canola oil. On medium heat, set the tortilla on the skillet, put in the taco meat, diced tomato, onions and cheese. Fold the tortilla in half and let that side cook for about 5 minutes. Flip it then let the other side cook for about 5 minutes, ideally until crispy. Slice into bite sizes. Serve warm.
