I first tried a similar eggplant relish at this awesome downtown Thai restaurant here in Portland, ME. They served it in one of those cute Chinese steamers with steamed veggies.
There are certainly days when I just love to have tons of veggies but I try to just keep it simple – no frying whatsoever, no sauce…so if you are like me who loves big flavor but small calories, then this recipe might be a delight to you!
This quick side dish just needs these 4 key ingredients:
1 Eggplant (Large, Unpeeled), steamed
Sauteed Shrimp Paste (Spicy)
½ of a medium yellow onion, about 3 tablespoons, chopped
About 2 tbsps of Minced Fresh Garlic
Cut the eggplant into smaller, thinner pieces. Steam them for about 5 minutes. Take them off the steamer once done, then put them on a plate and set them aside. Let them cool for about 5 minutes.
Once the eggplant pieces are cooled, slice them into small cubes. On medium heat, with a little bit of oil (I used olive oil), sweat the garlic for about a minute then add the chopped onion and sweat them along with the garlic for another minute. Add in the eggplant and shrimp paste and simmer for about 3 minutes.
That’s it! Easy peasy, right? Serve with steamed veggies or use as a side dish for your favorite meal. For the shrimp paste, I recommend the Barrio Fiesta brand which could be found in Asian stores. I also use the spicy variant for some kick.
