Crispy Ranch Turkey Breast ala Ella

I’m always on the lookout for deliciously healthy recipes! I saw this while browsing Pinterest not too long ago and since I love ranch, I thought of including in it my menu for the week.

The original recipe called for chicken breasts but the store didn’t have chicken breasts that were not in family packs. I figured it would work well with turkey breasts too. I got a pack of thinly sliced Stony Brook Farms’ turkey breast and tweaked the original recipe.

Here’s a list of items I used for this tasty alternative to greasy fried chicken:

4 Thinly Sliced Turkey Breast

2 tbsps plain greek yogurt

¼ tsp oregano

¼ tsp basil

Pinch of garlic powder

½ tsp buttermilk

2 tsps lemon juice

1.5 cups of crushed Wheaties cereal

1 packet dry Ranch dressing mix

A pinch cayenne pepper (ground red pepper)

Directions:
Cut the turkey breasts into thinner slices if they’re too thick.  Whisk together buttermilk, lemon juice and oregano, basil, garlic powder.  Put the breasts in ziplock bag that is big enough and pour in buttermilk mixture.  Allow turkey to marinate for at least 2 hours, up to overnight.

Remove turkey from ziplock bag and let drain in colander, then pat dry on a cutting board.

Preheat oven to 350 degrees F.  If available, top a baking sheet with a wire cookie cooling rack and spray rack with nonstick cooking spray.  Otherwise, spray cookie sheet with nonstick cooking spray and set aside.

Mix cayenne pepper into nonfat yogurt with a fork then coat both sides of each breast with the yogurt mixture.

Crush the Wheaties in the ziplock bag then add ranch mix and shake.  The easiest way is to just squish the bag with your fingers for a few minutes until the chunks are small enough.

One at a time, put each sour cream coated chicken in the seasoned corn flake crumbs and gently shake until the turkey breast is coated. It is important that you should only have one breast in the bag at a time. If the meat it still too moist, try laying them on a plate and coat both sides with Wheaties/corn flakes mixture.

Lightly mist tops of turkey with nonstick cooking spray, and bake in the preheated oven for 45 minutes. Serve with rice or pasta of your choice and some steamed veggies – awesome lunch or dinner!

The best part is when I computed how much calories there is in one serving, it’s only 209! Bon appetit!
